Great knife for those on a budget or just getting into processing primal cuts. Knife is sharp. If you are going to process big pieces of meat, you need a boning knife to make the job easier (relly, I am mostly using it to take off what I don't want - lets you get tight on silverskin). If you are just starting out (like me) looking to save some money turning big meat into smaller meat, this knife will help you without breaking the bank. Sharp as heck and easy to clean. I got a larger breaking knife to go with it, and both are a huge help. I thought it would just be a luxury, but it has been a huge help for getting close.

My son suggested we try this knife for some of our meat processing adventures. I have to admit it works pretty well. It is flexible which allows me to go around the bones easier, but isn't so flexible that it makes it hard to use. It's a pretty good knife, just have to sharpen it a little more often than I normally would. I tend to be a little rough on my knives 😁 I would purchase again!

I purchased the honing steel, butcher knife, and boning knife to process a half pig carcass in November of 2019. The blade arrived very sharp and maintained its sharpness throughout cutting while using the honing steel. I have thoroughly enjoyed this knife, wishing I had purchased it sooner -- having butchered and processed my own chickens, ducks, goat, and now pig, over the past couple of years. When talking knives with friends and anyone interested in breaking down their own animals, I have recommended this knife. It isn't fancy but it certainly gets the job done. The semi-flexible blade was perfect to separate flesh from bone -- including the aitch bone with minimal loss. The price is right, I was extremely happy with the knife.
