This knife is a work of art and razor sharp - one drawback is that it should come with a saya to protect the beauty of your investment. Shun have distribution in the US but do not ship to Canada and the price of a Shun saya on Amazon for this knife is outrageous - legal extortion.

Bought this one night after a particularly great day at work and after a 3rd glass of wine... gift to self. It's a gorgeous knife, and well-made. (Well, it IS a Shun, after all!) Great addition to my pantheon of beautiful knives! (If they'd let me, I might take it into the OR and take out an appendix with it! LOL!)

I have two other Shun knives, so am quite familiar with the brand. Love them, and love the boning/fillet knife.I recently got into smoking meat, which involves A LOT of prep work and post-smoke cutting. Especially cutting excess fat from a brisket. Yikes! I also needed a good knife for filleting salmon, black cod and other whole fish.The Shun meets or exceeds all my expectations in terms of sharpness and ease-of-use. It is truly a pleasure to use. I feel like a surgeon as I am cutting up the meat. Its sooo accurate. Aesthetically, it is also a thing of beauty. Which is not really important for a knife, but still ...So, Shuns are great ... yada yada yada.But, the point I want to make in this review is to compare it (from the Premier line) with the Shun Classic line. My other two Shuns are both Classics. One a hollow ground Santoku and a Slicing knife. Other than the aesthetics, all three perform equivalently and take a super fine edge. I would be indifferent between choosing to cut with a Premier or a Classic. I bought the Premier on Prime Day, priced $20 more than the Classic, which was not included in the Prime sale. I would do it again. But the current $40 difference ... meh. Maybe a bridge too far.One other thing I will mention is its use as a fillet knife. The Shun has a super fine tip. Great for digging in and making precision cuts. Many fillet knives are longer (e.g. 9"), but more importantly flexible. If you have any fillet experience or watch some videos, skinning a fillet requires getting the knife blade as close to the skin as possible. Bending the blade on the table (skin side down) to make the skinning cut. The Shun is very stiff, and also a short for a larger fish. I may end up getting an additional fillet knife, e.g. a Bubba 9-inch Tapered Flex fillet knife.

We have a large collection of Shun knives, however, did not have a boning knife. We went with the premier on this but most of our others are classic. This knife really works great, is beautiful to look at and this company is great to deal with! Thank you! My hubby says it reminds him of a pirate knife 😊

Blade is sharp. Handle is comfortable to use. Boning a porterhouse for serving has never been better using this blade. Works beautifully on lamb fat cap, silver skin removal. Excellent craftsmanship and quality, worth the investment. It will last a lifetime provided not left sitting in water.

Just added this to my Shun collection after starting purchasing large cuts of pork and beef. My first use of the knife was a huge success. I am brand new to butchering large cuts of meat and I knew I loved my other Shun Premier knifes. The price and finding this in stock slowed down my purchase but so glad I got one.Upon slicing the 22lb shoulder to something more manageable I simply used the weight/gravity of the meat itself applied to the knife to slice. I never understood exactly what "cut like butter" was after all my $40 knife sets all failed me. This knife did exactly that. Look forward to passing this set to my daughter some day. This and the ultimate utility knife are my favorite knifes in this set because of the beauty and raver sharp! Thank you Shun!

This is a fantastic knife. Not gonna lie, I cringed at the idea of spending this much on a knife. Most of my knives are $12 IKEA knives, which aren't bad. I have a few other higher end knives too, so I know the difference. I do a lot of meat cutting, I buy my beef in whole cows and have them rough cut at the butcher. So I needed a knife that could trim, cut and slice and this is it. It finely trims just the right amount of fat of a brisket, cuts around a bone on a big roast, or slices you're finished steak off like a champ. Money well spent.Highly recommend if you want a serious knife. Be careful washing it though...don't find out the hard way how sharp it is! lol

Deboned and pork shoulder with ease.Review updated after a year of use. This has become one of my absolute go-to knives. It works well in 'cutability' of course but the agility achieved with this knife makes it exemplary. Watermelon is great as it scribes so well. Meat is obviously a wonder to carve with this. The length ensures I reach what I need to and the tip is honed for the hard to reach. My Chef knife often gets left behind for this blade. Highly recommend this knife for its feel, sharpness, contour, balance, and performance.

extremely sharp, well balanced and looks amazing! I was looking for a knife to trim and cut raw meat without hacking away at the meat. After researching many knives, I choice this one because it is thin, multiple layers of folded steel for strength and the low angle edge.I know it is a Boning/Fillet knife but this is a hands on test on fruits and vegetables.Tomato, rest the blade on top and pull back and the shear weight of the knife will cut through without resistance!Carrot, can cut so thin the slices are transparent!Bell pepper, scary fast, like a hot knife in butter!Raw chicken, (trimming excess fat off) Simply amazing, this is why I bought this knife!! It cuts through meat and fat so easy, it's scary! Do not be careless and cut your fingers! Kiss them goodbye!Raw beef, again like a hot knife through butter!Just use the curve of the blade do the work, flex your wrist and don't cut yourself!One of the sharpest blades I have ever used and own! Just buy it! Treat yourself now!!
