Makes madeleines very well. It is non-stick as advertised. I've used it many times, washed it in the dishwasher and it still looks like new.A basic madeleine recipe (I recommend the Joy of Baking recipe) makes 2 dozen cookies, so buy 2 of these.

I gave this item to a client of mine who loves to bake in the hopes of being on the receiving end of the final product, and boy was I! When I told her how amazing the cookies were, how the edges were the perfect amount of crunch, and the middles the perfect amount of chewy, she said that she thought so, too, and she said she thought that it had to do with the pan, as well as the recipe, of course. But she'd used this recipe before and didn't get the same product, so it must be the pan, especially because she agreed that the edges of the cookies were the perfect amount of crunch, and the middles the perfect amount of chewy. So there you have it! A FIVE STAR review! Yay!

I love this pan. It goes directly from the freezer to being filled to the oven without warping or twisting. The heat transfer seems even and it does not generate any hot spots. Cleans easily. I've done 5 batches of madeleines in the two weeks I've had it and they've all turned out exactly the same.This is a wonderful pan, easy to use, easy to clean and store away. It's light and does not have any of the really sharp edges so common to the type. The product description is a touch misleading. It isn't 12 cups but rather 12 holes or indents for the madeleines. Given that each one is around a tablespoon of batter, you can see that it cannot possible be 12 cups in size. Aside from the description, it is a great addition to the kitchen.

If you want to make actual French Madeleines, these are the pans for you at a reasonable cost. Does not over brown like non stick pans. The pans work perfectly. Brush the molds with Beurre du Commercy, a mixture of 2 tbs melted butter and a tbs of Flour wiping away any pooled butter. This will allow the Madeleine's to release from the molds by turning upside down and rapping on the counter. The pans went through the dishwasher without problems. Also, a hint. Use the Julia Child recipe, real pure vanilla extract, and fresh orange or lemon zest to avoid making those horrid fakes sold commercially.

The only reason I'm giving this a 4 is because the actual size is misrepresented in the specs. The actual pan is very nice. Wish I could have used it. It is too big for my little oven. Know that the pan is almost 16'" long.

I would recommend this particular madeleine pan, as a matter of fact, I purchased two of them. A normal batch size recipe makes an amount of batter which fills two pans such as this. Careful following of the better recipes call for the tins to be lightly buttered and floured then chilled in your refrigerator along with the batter for a couple hours prior to bringing them together and baking for the prescribed few minutes. Not only do the manufacturer's pans bake to perfection, but are extremely easy to clean.

The plate made great Madeleines. I used chilled butter and flour to coat the pan. They came out great.The problem I had was when I washed it in the dishwasher my lemi-shine cleaner destroyed the tin plate finish. I had to throw out the pan. Going to buy an anodized aluminum pan next.
