I ordered these for applying chocolate to my madeleines. I already had pans to bake them, not have never used them to bake. But they're great for pouring melted chocolate into, then pressed the cookies on top and chilled until set. The silicone ones are smaller than my pans, but still worked fine, and they released from the silicone perfectly. Great purchase.

With silicone it makes it easier to clean and remove the Madeleines from the molds. I was so intimidated from the regular Madeleine pans that I never got around to making them. These make it easy to make them.

These molds are perfect! My Madeleine’s came out perfectly! Super easy to use but be careful when washing because the soapy taste stays and it’s super hard to get out.

I've made madeleines for decades, with the recipe from the Joy of Cooking (another reviewer included it here). A friend gave me expensive metal pans for making these 40 years ago, and I've used them a zillion times! Now the pans starting to show signs of age, and I've had to concede that it's time to replace them.I really like these silicone pans! The size of the forms lets me make exactly 2 dozen perfect-size madeleines from my tried-and-true recipe, so I use them all every time. They bake evenly and wash easily.I should note a few things:Although they're non-stick (and my recipe doesn't say anything about greasing the pan), you should use a cooking spray to be sure that you can slide them out of the forms easily. And be sure to let them cool thoroughly before you ease them out of the pan. (A huge advantage of these is you can gently prod the madeleine, and then pull the pan back a little at a time so you can be sure it's lifting properly.)To keep the pans level (and to avoid accidental tipping!), be sure to put them on a cookie sheet when you put them in the oven.
