I have used it once and it performed well. Since the base is separate from the thin walled rim, the rim needs to be handled carefully to prevent it from getting bent out of shape.

Made a quiche and it was excellent! Completely baked through and easily released from the pan once cooked from the bottom up. Carbon steel constructed and coated in nonstick. Love the fluted edges and extremely easy to clean nothing sticks! Steel is the way to go ! Ceramic is pretty but doesn’t bake well always.

I purchased this pan to finally make that perfect apple pie after all these years. I saw it used by one of my all-time favorite chefs. He made an amazing apple pie in it (whose recipe I used this time) along with the use of a pie bird (also purchased here). Well…this pan not only baked a superb crust but also gave a wonderful presentation when removed from the pan (quite easily done by balancing pie on a high canister and sliding the side of pan down away from pie) and put on a serving plate.Looking forward to find other items to make in it besides pies.
