Very nice and well made product from France. The pan makes excellent Madeleine pastries. I'm not really a baker though. I just do it because my wife doesn't have time to cook. I have only used the pan twice but each time it makes excellent pastry. I would spend the extra money on these instead of a cheaper, thinner brand since this is an item you would keep for many years.

With proper greasing madeleines do not stick. I have used butter, a butter and vegetable oil combo and good old fashioned Crisco. Key is generous greasing of creases and edges Flour dusting optional, I don't flour. Nothing has stuck so far. Pan cleans up easily. Madeleines brown up nicely. I have made classic madeleines with excellent results. Also, the madeleine shape with a chocolate chip cookie recipe. See photos! This pan never lets me down. I love that it's stainless steel with no nonstick coating. Totally a cookie baking go to for me. Highly recommended!

I had a dark metal pan and it make the pan side of the bakery dark. So I got this silver pan and Voila! Both sides of the madeleine look perfect!

Size is perfect! Browning is good. Just wish the ridges were a tad deeper. My finished madeleines didn’t maintain much of a ridge. Don’t overfill!

"Flavor" doesn't apply to this cookie sheet/pan. It's very sturdy, feels good to handle, cleans easily, and made great Madeline cookies. It would have been even better if there were "handles" on it. It was a bit of a challenge to remove the sheet from the oven because there were no "bump outs" to act as handles. Still well worth getting when making Madelines.

This pan works like a charm! I like the fact that it doesn't have the "non-stick" coating as there's so much health issues linked to those. This is the good old pan with no side effects and on top of that reasonably priced! Don't worry about the madeleines sticking to it, as they won't. The trick is simply to use a soft butter, and to butter each mold thoroughly without forgetting to dust them with flour (just remove excess flour by tapping the pan against your counter top or sink). I can promise you that the madeleines will slide right off the pan without any effort, without using any utensil, just by tilting the pan!Also the size of the madeleines is just right, this is the standard size that a madeleine should be. I've been in Commercy France, at the bakery that makes them. The madeleines were first made in Commercy. After, that you can have the mini ones, but if you want the traditional size, this is what you'll get with this pan.As for the "rust" factor that keeps people from buying this old fashion pans... this not difficult to deal with. The trick is to make sure your pan is totally dry after cleaning it. The best to do is to clean your pan right after you're done baking, with water and some dish liquid soap with a soft sponge (no scrubbing), it cleans really easily. Then, dry carefully each mold with a paper towel and to be sure it's all dry, put your pan in your "still warm" oven, and that's it, your pan won't rust! :)Note: I bought 2 pans as the recipe makes dough for 24 madeleines. The 2 pans fit perfect in the oven, and all is baked at once ;)

I ordered this pan to make my first batch of madeleines. It worked great! I brushed the cavities with melted butter and allowed to cool before adding the batter. The little cakes baked beautifully and I was able to pop them out with a gentle lift using an offset spatula. The pan cleaned quickly with soap and water, leaving no brown stains, it still looks like new. An added bonus: made in France which seems very appropriate. I will be using again and again and will probably order another so I can bake full batches of 24 all at once.
