The Garasuki pictured on amazon is not the one or type I received. No convex curve on the right side and no labeling on the blade. (see photos) The lack of curvature changes the function of the knife, albeit mildly. The lack of labeling brings the 'point of origin' into question.The good news is that it is a large Japanese style boning knife at an excellent price point. I am new to cooking with this type of knife (single bevel) and I wanted an inexpensive example to practice with and this fits the bill. So, I am not returning it. Fit and finish is good for the price. It is robust and it is quite sharp. I broke down a 12lb (5 1/2kg) smoked turkey with it and it worked very well. Not sure what type of steel was used (see above) so I'm hand washing it.

サイズ感はまるで鉈のようです。一般的な調理にはやや、取り回しが悪いかもしれませんが、大概のものを切っても刃こぼれするようなことはなく、安心して使いまくれます。鋼よりはマシですが、濡れたまま放置すると料理している間にうっすらサビが浮くくらいには錆びやすいので、使う都度、布巾などで綺麗にふき取るようにしてください。

now let me tell you smth abt this knife:it's just finest quality! came packed so nicely and with care. Unbelievable value for this price!it's very heavy, thick and extremely sharp, hand finished, i owe many jap. knives and work in a japanese cuisine for long time, and this is a proper tool. however i would like to know what kind of steel exactly used to craft this knife.

モノを切る時に力を込めなくても済む包丁が欲しかったので購入。幅広なので刃先を細かく使うには向きませんが、長さと重さで肉切りはもちろん、野菜の千切りや玉ねぎの薄切りなどに重宝します。値段も手ごろです、鋼なので錆やくすみには注意しなければいけませんが。重い牛刀が欲しいが、探しても見当たらないという人が居たら小間切包丁、小間切牛刀はおすすめです。
