Thermocouple technology. The thermocouple is a device that generates electricity when heat is applied to its tip. It consists of two different types of metal wires that are both electrical conductors, joined together at one end and connected to a voltage-measuring device at the other end. When the junction of the two metals is heated or cooled, a voltage is created that can be correlated to temperature. Thermocouples are available in different combinations of metals or calibrations. The most common calibrations are J, K, T, and E, each of which measures a different temperature range. The maximum temperature changes with the diameter of the wire used.

I had the TCT572 red and it was the best but time created a crack in the battery housing and every so often it would go wonky when used and the temps would jump up AND down so I got this one.This one feels like it is 2-3 seconds slower to get to the highest temperature but it does get an accurate enough temperature for home cooking. Compared to the old red one it differs by +/- 1 degree.I like how it stays lit up as long as the probe is in the open position and auto shuts off when put in the closed position.

Bought as replacement of my old CDN pen thermometer which broke at the joint - love the product improvements including the new rotating joint, the larger, auto-rotating display, the automatic on/off. CDN has really improved on an already good product. The best improvement is the faster read-out speed. Very, very happy with this product.
