Worked flawlessly. Using this wrapping paper for the first time I was able to make the best brisket I’ve ever had in my life, let alone the best brisket I’ve ever made. Allowed me to make my brisket so tender that it shredded in your hands.

We smoke a lot of things to eat, and for years we always wrapped the meat using aluminum foil if what we were smoking required wrapping as part of the process. This worked fine but aluminum foil is expensive. Then one day we were watching some content on YouTube and learned about using pink butcher's paper to wrap your meat instead of aluminum foil and so we gave it a try.By and large, using pink butcher's paper to wrap up foods as they're being smoked works pretty well. The paper in this extra wide roll from Blue Smoke is high quality. It does not fall apart even when it is thoroughly soaked with juices and fat. The 24" wide roll works best for us as we find there is more extra paper and that makes the edges easier to fold under.Note that we did have to adjust our cooking cycles somewhat as we have come to the conclusion that, when you wrap your meat in this pink paper, it does take some time for the paper to heat up and pass the heat into the meat. Of course that is almost instantaneous with aluminum foil, so we'd never considered the effect wrapping with paper would have. One final thought is this - we compared a piece of this pink butcher's paper with another brand we bought here on Amazon and can't see any difference whatsoever. Even when we hold the pieces of paper up to a light the fibers, the color, everything seems identical. It is almost like both rolls came from the same paper mill.

It’s thick, it folds easily and won’t tear unless you mean it. It holds the juices while cooking and the fact that it’s quite wide helps tremendously for larger pieces. It might be slightly wasteful in some cases, but if you’re smoking something smaller, you could as well precut your paper so you can get “most of it”. With 175’ by 24’’ worth of butcher paper, that roll is huge and will take up a lot of space.Basically, it let your meat breathes and take that smoke in while keeping the juice in. If you smoke and never tried using Butcher paper, do yourself a favor and buy a roll. Worst case scenario, you won’t always use it, but will find some use. Best case scenario, it will change the way you smoke.This butcher paper isn’t as cheap as what you can generally find locally, but it’s wide, and that’s worth the asked price to me.
