After researching the best oil to use for high heat cooking, I grilled a perfect mr filet mignon on the first use. I am not an experienced griller, so I was afraid of smoke and either over or under-cooking it. The only thing I would change would be to make the handle bigger/longer. The pan is so large that it's hard to leverage it with one hand. I look forward to even better tasting steaks as the seasoning builds.

I had a 12 inch non stick grill that I used continuously until the coating cracked. I looked for a healthier option that was large enough to accommodate two steaks or four chicken thighs at a time. This skillet does. It heats up and holds the heat to grill well. It’s easy to clean and cure with oil. Secret? Heat up on medium or medium/high until the temperature if just right first and then put on the veg or meats for a nice sear. Highly recommend

I'm just learning how to cook with this skillet, but the steaks are tasting great. I've found I need to use lower heat than what I've read in other reviews... just enough to make the steak sizzle when it hits the skillet, but not so much as to make it cause too much smoke. BTW, use avacado oil to help keep the smoke down. The skillet gets VERY HOT, so be careful and use something to protect your hands when touching the handle! I cook for three minutes a side with the temperature just about 1/3 or the way about medium, and let the meat sit for about five minutes on the plate and then am ready to eat... nice and juicy and tender.Be sure to season the pan before using it the first time, and after each use. You won't get any sticking if you do this.The pan is quite heavy, so be prepared for that. You may need to use two hands if you don't have much strength in your hands and forearms.Cleaning isn't too bad if you let the skillet cool down until it's just a bit warm, then put in warm water and scrub it out with a cleaning brush. It may take some stout scrubbing, but if you're patient, you'll get it all out. Then season it again, put it back into the oven and heat it up for a couple of hours at 250 and you'll be ready to go again next time. Yes, there's some work to be done in using a cast iron skillet, but I've found it's worth it. If you like to have those nice grilling lines on your steaks and like nice luscious steaks, this skillet will help you get what you're looking for.I can grill two large strip steaks in this at a time easily, and could probably do three, but would need to position them carefully.
