The Wine Making Process

TAKE A WALK ON THE WILD SIDE

Wine making has never been so simple. Before starting, be sure to clean and sanitize equipment to be used. Bring all kit components up to room temperature.

Wine Making Process Step 1

1. PRIMARY FERMENTATION

Mix 2L of hot water and bentonite. Pour contents of juice base bag. Top fermenter up to 23L with good quality cool drinking water. If included, stir in oak chips or granular oak now. Use a hydrometer to measure and record the Day 1 Specific Gravity (S.G.). Sprinkle dry year on top of juice base. Cover with lid and keep fermentation area warm (20°C to 25°C or 68°F to 77°F) for the entire winemaking process.

2. STABILIZING/DEGASSING

On Day 14, measure the S.G. If wine is not in required range, check again in 48 hours Carefully syphon wine into a sanitized carboy, leaving sediment behind. Add contents of sulphite/sorbate package into carboy. Agitate wine with a stirring spoon. Stir in one package of kieselsol, saving the second package for later if there are two. Fit airlock filled halfway with sulphite solution into the neck of the carboy and leave for 24 hours.

3. CLEARING

On Day 15, stir the contents of the Reserve(s) into the carboy, if included. Stir in Chitosan(s). If included, add second Kieselsol 1 hr after Chitosan addition. If included, stir in Oak Cubes. Replace lid/airlock and let wine sit in a warm (20°C to 25°C / 68°F to 77°F), undisturbed area, away from direct heat and light. After 5 days, twist carboy without lifting to allow any sediment stuck on the walls to drop. Continue clearing process according to chart provided.

4. POLISHING RACK/AGING

Wine should be perfectly clear. If not, leave wine another 7-14 days to finish clearing. Carefully rack wine off of sediment (and oak cubes if present) into a clean and sanitized carboy fitted with a solid bung. Leave wine to sit undisturbed a minimum of 2 days to allow settling.

5. BOTTLING (CLEAR WINE ONLY)

Carefully syphon your wine into clean and sanitized bottles. Cork bottles and leave upright for 3-5 days, allowing cork. to expand. Invert or store on side to keep cork moist. Store wine at 11°C to 18°C or 52°F to 65°F. If choosing to carboy age wine, top-up with a similar style wine and fit with a solid stopper. Bottle aging is the preferred method.

Wine thief and siphon was wrong. Meaning piece where too small to even act as a siphon. I didn’t get the right size clamps. Instructions were not clear and misleading. I would not but this kit agin. Horrible I’m very lucky I bought this for class and my professor and class mates were helpful on guiding me.

This is far from a “premium” wine equipment starter kit. The description may have mentioned a plastic carboy, but I missed it. Who in their right mind would leave wine in plastic for a year, given what we know? Check any winemaking site or ask ChatGPT about leaving wine in plastic for that long—it’s simply not done if you’re serious about winemaking.Since returns aren’t accepted, I’m stuck with a useless 5-gallon jug.My advice: Don’t buy winemaking equipment from Amazon! Purchase your equipment from a specialty wine equipment store instead.

Stirring spoon is too wide to fit in provided carboy and items came broken. Not returnable and unable to contact seller. Do not recommend.

I have been making wine for a while and bought this kit for a friend who wanted to make wine. When you make wine from a kit, you don't bottle until at least 30 days into the wine making process so my "return" window had passed by the time we got to use the hand corker. It doesn't work at all! The part that is supposed to grab the neck of the bottle will not hold the corker in place so the corks end up not going all the way in. When you try to adjust the corker, it either pushes the cork too far in or still doesn't work because it won't stay down on the bottle. This was VERY frustrating especially for a new wine maker.With that being said here are some other comments about the kit:1. There is no pre-drilled hole in the bucket for the airlock, so be prepared to make the hole yourself.2. The siphon is NOT an auto siphon, so my friend ended up buying a separate auto siphon. To be fair, the kit only stated that it included siphon tubing, but an auto siphon is a pretty standard tool and I was disappointed that it wasn't part of the kit.3. If you're actually going to make wine, the kit is lacking some components like a bottling wand and wine degassing tool (whip or similar).

Siphon is not automatic, no hole in lid for airlock, I had to drill my own hole and purchase new airlock with grommets. I ended up spending more on additional supplies to finish what I thought was a complete kit to get tarted.

It's a decent kit. And I don't know that all the fault lies with the kit or with the wine kit I bought but they're the same company. The main complaints I have are:1) they don't tell you where 6 gallons is on the side of the white bucket. So you start filling it and then you wonder and you read online that they suggest filling it with 6 gallons of water to find out first. Well too late now.2) I never used this type of siphon before. And so I eventually got my pump siphon out of my beer kit until I looked online about how to use it. Definitely should be included.Other than that I'm quite happy with it. It's a good kit and the wine turned out well that I made with it.

It has all the things one need to make a batch of wine. I used wild grapes Cabernet kit for my first effort and even as a newbie i ended up with 27 very nice bottles of wine. There was a little waste and a little tasting along the line. As one progress a few additional things is nice but you really have everything you need to get started and make wine. You do need both equipment and ingredient kit
