I liked that I did not have to fill the house with steam.. I just used it outside. The only thing and it is not a big deal but the temperature setting is not exact, it is for reference. Water boils at 212 degrees F but that's not really how the Cadet works exactly. that being said, it is more than capable of getting the job done.

I didn't buy this from Amazon but this product hasn't a larger copper coil and can heat a 9-10 bottom sized pan which is a real bonus. Most only 6 inches. Once you realize this it works as well as anything on the market.

There are a handful of reasons that you should keep looking.First, an electric range in your home will boil 3 liters of water quicker then the cadet will. Trust me I tested it and it's true.It is made in China, there is one induction burner Vollrath makes that is made in the US, and the only one they will work on after the warranty expires.This is the meat and potatoes of this review, you purchase this, warranty runs out, they won't even give you the time of day. They won't replace parts they don't even sell parts! Even though it's a ten dollar cooling fan that has burned out that causes them to stop working. What you will end up with is the most expensive bookend you never thought you would be buying. I'd throw it away but I guess my principals are a bit different than Vollrath's

this is item is horribly bad to use. sometimes working and other times is not. strongly suggest you guys try the alternatives. It is very expensive and if you use it for more than a month and want to return it,they charge you 50% of the price and you pay the return shipping fee that costs a lot because of the weight.

The temperature control seems to be about 70 degrees low. EX: water boils at 212 but I have to set it close to 290 to make it boil continuously. The thinner the cooking pan and the flatter the bottom the better the temperature control. I ground the bottom ridge off of my cast iron skillet and made sure it was perfectly flat. It works much better now.

As an empty nester with a small kitchen, it was easy for me to rely on restaurants for professional preparation of a broad range of dishes. My culinary skills began to wither, and traditional stoves and ovens seemed to offer overkill for someone seeking both small servings and specialized penache. I saved my kitchen for microwave meals, hotplate warmups, and toaster oven fare. It wasn't healthy, and it wasn't fun. I decided to reinvent myself around personalized technologies: a rice/vegetable steamer, a toaster/convection oven, my microwave, and a stovetop. To bring these technologies all together, I chose the Vollrath 59300 Mirage Cadet induction stovetop--intended for professional restaurant use. Why?Vollrath wanted to develop a tool that was simple, safe, portable, reliable, and idiot proof: a tool for an omelette chef to show off in front of a hungry diner. Take away the omelette chef part, and Vollrath made the Cadet for me. Twenty energy presets, from 90 to 1800 watts(twice the number of most portable units); temperature settings at 10 degree increments from 100 to 400 degrees. I was in control.Then there's the idiot proof part.If I did my homework, I'd know that I needed magnetic cookware and I should begin with midrange settings. If I pushed the "on" button on the left, and placed an appropriate magnetic pan on the ceramic top, it would immediately begin to heat at the midrange level--I wouldn't have to think. However, if I tried with a non magnetic pan, the digital readout would gently scold me until I found an appropriate pan. If I removed the pan from the ceramic stovetop and forgot to turn it off, Cadet will turn itself off after a short time. As soon as I found an appropriate pan, Cadet would return me to the settings I had last set. If I used the stovetop for some time and the ceramic surface heated up, Cadet would warn us by flashing "stove hot" and continue the fan until things cooled down. The industrial quality exterior is stainless steel and ceramic--made to last for a long time under heavy use--no plastic anywhere to melt by accident.In preparation for induction, I've bought some additional magnetic pots and pans that could go from the stove top into my convection oven. Now I'm just going to have some fun--even if I never will become a Vollrath style professional omelette chef.
