Keeping Our Knives Sharp 101

As counterintuitive as it may sound, a sharper knife is a safer knife! Dull knife blades tempt us towards bad habits while cutting, putting our fingers where we don’t want them to be! Thus it is imperative we keep our blades sharp.

So how do we go about doing that?

Honing Rods vs. Knife Sharpeners

Honing a knife absolutely makes a blade’s edge “sharper,” so it makes sense that many of us think a honing rod is actually a sharpening rod. There’s a difference though. What we see chefs doing all the time on our favorite cooking show is actually honing a knife rather than sharpening it. Sharpening a knife is usually done with a whetstone and removes a noticeable amount of metal from the blade. For home cooks, this shouldn’t be done more than 2 times a year. What we should be doing on a regular basis, is honing our knives!

A knife hone does remove a small amount of metal, but it is minimal. Rather, a hone realigns the blade’s edge, which has experienced microscopic folds during use, removing the dullness created over time. Readjusting the knife edge will make it cut like new without taking away so much of the knife itself, helping the blade last longer than it would from repeated sharpening!

What About Ceramic Hones?

Ceramic rods fall somewhere between honing and sharpening depending on their grit. A ceramic grit around 400-800 is sharpening your knife. A grit around 2000 is honing your knife.

The main difference between all honing rods is how hard each is, and how much metal they remove from your knife. Briefly, coarseness and metal removed in decreasing order is diamond, ceramic, steel.

Ceramic rods should always be used over steel rods for harder knives like Japanese knives.

How To Use Your Honing Rod

As odd as it may sound, honing your knife at the wrong angle can actually make your knife less effective! It is important to hone your knife at a 15-20 degree angle. The further you stray from that angle, the less effective your blade will be!

Simple Washing!

While it is not necessary to wash hones after each use, it is recommended you wipe the stropping ceramic down with a wet cloth to remove the metal particles. For deeper cleaning, just use soapy water, rinse, and dry!

I really should have bought this a long time ago, this has been turning my knife blades from “knives” to “razor blades”, it’s super easy to clean, just take a wet cloth with mild dish soap and wipe away a few times. I’ve also accidentally dropped it on tile from ~4 foot up and it’s not cracked or broken in any way, great price for being able to sharpen so easily

When it comes to ceramic honing rods, you really can’t ask for much more with this one. The materials are nice and the rod and handle are sleek and the construction is solid. The two different grits feature is the best, and I love how effectively they perform when used in order! The lower grit can grind out bad/worn edges back to good shape, then the higher grit takes that edge to body-shaving sharp in no time. The rod is long enough to hone any kitchen knife. This is a very fair price, too, and it’s hard to find a ceramic hone this cheap that performs this well! I personally love using it for my pocket or outdoor knives after I’ve stone-sharpened them because it just works so well! Now I just need to get the black one and I’ll be complete.

I have found that this honing rod works a lot better for keeping my kitchen knives sharp than my steel honing rod ever did. I like the longer length, which allows one to get the entire length of the blade at one stroke.

We have many knives that quickly lose their edge. I often use a honing steel to keep them sharp. Eventually, I have to sharpen the knives again.I decided to give this tool a chance and I am so glad that I did. It not only homes the edge, but it also sharpens it at the micro level. I can see that from the blue/gray stain in the cloth that I clean it with. My knives have stayed razor sharp even after multiple daily uses by running them through this steel once a day.

The sharpening steel that came with our knife set wasn't working to my satisfaction. I decided to get this honing rod because it had two grits on one rod. It's very easy to use.Our knives are much sharper now. Out of the 16 knives in the set, I had trouble with only one knife, don't know why, but it just took a little more persistence to finally get a good edge. The knives seem to stay sharper longer and redoing the edge is much easier now.I highly recommend this rod. IT WORKS!

Does was it says on the box. If a softer steel will show up on the steel. High carbon knifes work good on it. You knife needs to be sharp to start with

compre el blanco grano 1000/2000el afilado lo mantiene, es muy fácil afilar puedes cambiar de 1000 a 2000 con girar el mango.perooooooooo, tenia 5 cuchillos de buen acero sin afilar, le di 35 pasadas aproximada con esta chaira y........ agarraron filo y muy buen filo. al ver la textura de la cerámica cómo opone buena resistencia al arrastre del cuchillo, dije creo que puede incluso sacar filo sin piedra, obvio no es un afilado perfecto pero te saca del apuro.
