It's a perfectly adequate brasier, and I purchased this one instead of the cast-iron version because of the weight. I just knew that cast-iron was going to be too heavy for me to handle. That being said, the one thing I will say is that the evaporation rate for liquids in this brasier needs to be paid attention to. It's not a problem, it's just that if the recipe calls for reducing the liquid, you probably won't have to. I made porc au cidre and it turned out beautifully. To finish the recipe, it called for removing the pork and reducing the liquid by half. I did not have to reduce the liquid by half.
