a pile of 2 cups of flour on counter. Use the measuring cup to hollow out a ditch in the center of the flour. break all 3 eggs in the center, add oil and salt. Mix ingredients together while slowly incorporating the flour. Mix until the dough has become clumpy but mixed slightly well. Knead for 10-15 minutes until dough is no longer sticky. If it is still sticky after that time, add the remaining 1/4 cup of flour. Wrap tightly in plastic wrap and place in fridge for up to 24 hours or let stand at room temp for 45 minutes to 2 hours. Bring to room temp and cut into fourths. Follow instructions that come with the noodle maker from here.
