I make a lot of flans. We Cubans make and bring flans to just about every get together, especially now at Christmas time. I always make mine in the oven, and being able to make it on the cook top will be a game changer. Not having to run my oven for an hour will be so great. I really like that this double boiler has a glass top where I can monitor it along as it cooks. The aluminum double boiler is shiny and the interior is of a Bundt style. It is of a very nice quality.

I have always used a makeshift double boiler and got away with it, but it would take a little ingenuity especially to keep the inner pan from contacting the bottom of the boiler pan. This size is bigger than what I expected and that is a good thing to be able to get from the "cone" to the pan edge. Material is meh, but this is a 4x a year use for me not a daily item.
