Unfortunately, I missed the return window because I couldn't use the product in the first month as I was very busy. But today I tried to use it and it was struggling with ONIONS. I have used literally $5 mandolines that can at least slice through onions if not tomatoes at blazing speeds. This was so horrible I could not use it even with my hand. I wasn't even using their very poor safety guard which cannot even pierce an onion because there is no prick in the center.I tried removing the grating blades and only using the primary "plain" blade to see if the blade itself is blunt. Unfortunately, it was. When I looked more closely, I see a lot of tiny scratches on the plain blade as shown in the pictures, which is the primary single blade that's supposed to do the cutting. I think I got an extremely heavily used product that has literally lost its sharpness over years of use. This is completely unacceptable.

I did a bunch of research before buying a benriner super.V blades on other models have a lot of friction and can lead to accidents if free handing and binding.A lot of mandolins do not have sharpenable or replaceable bladesA lot of them are over engineeredThe Benriner is simple and--in my opinion, perfect.Onions for smash burgers as thin as thin can be without the onion turning to mushveggies for saladspotatoesHeck, even shaved meat for cheese steaksLove this thing. 'Super' easy to clean and pretty compact because of its simple design. You can easily fit a whole onion on the trough without having to trim. I recommend the super model to everyone who asks.Being able to sharpen the blade or buy replacements is a huge plus as I'm particular about keeping my blades sharp. That said, I've had it for months and have not needed to sharped it yet and I use it regularly.

A few reviewers said this product has stability issues where it won't cut evenly. They're honestly somewhat wrong. The cutting board is balanced evenly on the giant screw thing on the back. When you turn the screw, it moves the cutting board below the blade up and down. Before using the blade, press the cutting board firmly into the screw. Then, as long as you don't press down too hard (and you have no reason to), it'll cut evenly. The board has metal rods through it to keep it secured. Some of this will always be user error (if you don't press down evenly as you're slicing, it can still push the food down further from the blade mid-slice and mess up your slice). But the mandolin itself slices very evenly otherwise.Don't press down on the far-end of the cutting board away from the blade or the whole board will pop up, potentially injuring you if you press down on that mid-stroke.The hand guard is... not brilliant. If you're concerned, buy some slice-resistant gloves. Honestly, most mandolins' guards suck in some way, so I wasn't too disappointed. The extra blades for Julienne seem fairly useless. They're not sharp, which means you have to force food through with dangerous amounts of force. Softer foods just get squished by them, while harder foods are nearly impossible. The biggest one can SOMETIMES do things, the two smaller ones are so useless that they honestly felt like a waste of manufacturing dollars to me. If you want a mandoline for jullienne, this isn't the one.Four stars from me because it's extremely good at what it does--being very sharp, cutting very even slices with pinpoint precision. If you're looking for something with more bells and whistles, this isn't the one for you.

Japanese steel is amazing. We have been thru 4 or 5 cheap mandolines over the years and decided to pay for a good one. Glad we did. Cut quality and ease of cutting is superior to anything else we've owned. The julienne knives are questionable and we bent them the first time we tried to cut a potato. But for slicing veggies at a wide variety of thickness this cannot be beat. I even shaved some leftover steak for sandwiches. Yep, it will slice beef. Totally recommend.

Benriner is known for their slicers, I used one long ago and saw some newer models so I decided to try one. There are three sizes, and I think this large size is best for most home chefs. The smallest size simply isn't wide enough for many popular veggies, and the jumbo is overkill unless you consistently do large batches of cabbage, eggplant, huge squash, or other very large items. The included finger guard was... ok. Anytime you are using a mandoline, please protect your fingers and wear a certified cut resistant glove. Mandolines are sharp, but Benriner in particular is not joking around with the sharpness on their blades. Terrible cuts can be avoided with care so do not rush the cutting process or blame the design. These are damn good at what they are supposed to do.

I bought a Swissmar mandoline a year before I bought this one, and it was just awkward and clumsy. Finally in despair I tossed it and bought this one. Wow, what a difference, a simple but well-crafted tool. It just works - I can have it out and my food sliced and clean and back in the cabinet in minutes. Haven't tried the other cutters yet, but judging from the quality of the slicing blade I think they will work. One little tricky thing: you twist a knob on the back of the slicer to change the depth of a slice. You can turn and turn and not really see a difference - the trick is you have to press down on the bed a bit after you turn to see the bed move.
