Durabond is the best joint compound for 'building and filling' IMO. Sets like concrete, not easy to sand but leave enough room for a coat or two of topping and you have the best of both worlds. Terrific for bonding corner bead (the wider the better), including adding 90 degree corners over old bullnose if you want a more modern look and can't be bothered taking the old stuff off. If you fill the new corner bead so there's no gap between old and new, it's never going to to fail.
