Usage for Banneton

It provides structure for shaped loaves of bread during proofing, what is more, it is used for doughs that are too soft or wet to maintain their shape while rising.

Not only can our bread baskets assist to mold bread but it can also be used to hold fruits, vegetables, keeping them from getting dirty or getting wet.

Another usage of our product is that it can be utilized simply as a decorative handicraft. I believe that a delicate basket with firm texture and beautiful horizontal line will be just the perfect highlight for your room

Prevent Sticking

Wipe the inside of the bread basket with a damp cloth then lightly spray it with little water and dust with 1/2 rice flour and 1/2 flour, Or use the washable linen cloth that comes with the basket.

How to Use

• Dust the inside of the basket with flour to keep the dough from sticking

• Place the shaped and kneaded dough in basket and cover it with a slightly damp cloth

• Let the dough rise in a warm environment, but the temperature should not exceed 40°C (104°F) to avoid a reduced proof effect and dying yeast

• When the dough is ready to bake, gently but quickly turn the basket upside down, take the dough out of it and place onto a baking tray

• Place the risen dough in the oven and allow it to bake

Care instructions

• Don NOT put in microwave • Avoid putting near flame • Easily clean with damp cloth • It takes at least 3 uses to achieve a film that is stable enough to mediate moisture or temperature (humidity), retain dusting flour and facilitate easy release of your dough. • Great for rising your dough while providing the loaf with shape and wicking moisture from the crust. (For rising only, not for baking)

Hot tips

• “The first time you use your new banneton condition it by lightly misting with water then dust it with flour and tip out the excess before using”.

• For a delicious and crispy crust sprinkle or brush water on the bread before putting it into the preheated oven.

Cleaning

• If you wish to clean your banneton, do so carefully and sparingly. Soak it in cold water for a few minutes, scrubbing it gently, and never use soap. Should you discover mold, simply bake it on low heat (115-130 degrees celsius) for a few minutes to kill the bacteria, then take it to an aerated storage space.

Love this little powerhouse! I was skeptical at first, would a banneton basket really make a difference in my attempts at the perfect, gluten-free sourdough bread? The answer is a resounding YES! I've tried the baking in a cast iron, dutch oven... I've tried baking them in loaf pans... nothing beats a bread that proofed in this basket and then is baked on a Silpat on a cookie sheet, in my experience.My mom also mentioned that her grandfather, a baker in Germany, also used baskets to proof their sourdough and that it is supposed to help with the airflow around the loaf (to give it a good crust). Well, it definitely works to achieve that crunchy crust.One thing I was worried about was stickage because gluten-free doughs tend to stick to pans, etc. But that was a non-issue here.Helpful tips: Use rice flour to dust the banneton. A mix of rice flour, brown rice flour and sorghum flour is my go-to for bread baking. Place the banneton into a plastic bag to proof but fluff the plastic bag so it doesn't stick to the dough. Also, look up psyllium gel (where you add the psyllium husk powder to the water to create a gel that will give you a similar-to-gluten structure to your breads).

The inner dimensions of the oval basket are only 8 3/4" by 5 5/8". Pretty small.It's sturdy, but there are splinters on the bottom and staples holding it together.I was planning to use it like the French bakeries so I could get the texture in the dough,but it just doesn't seem food-safe. also, the liner is like burlap.I'm returning it.

I started experimenting with homemade sourdough and read about getting a banneton. I honestly expected to pay more, this was a great price and it's a really sturdy basket, and works great for making nice-looking artisan bread at home! I don't use the cloth insert, I like the lines from the basket on the bread. A blog I read said to just dust the inside with half and half rice/all-purpose flour (all-purpose flour by itself creates gluten so can make the bread stickier), so I have only used that to dust the basket (never any grease) and it works almost perfectly. Sometimes I have to ease the dough out carefully but I've never had it stick badly. Great product for a great price!
