The size or capacity refers to the outer saucepan that holds the boiling water NOT the insert size. So if you want to have 8 quart insert size, you need to order the 12 quart double boiler. Apart from that a sturdy well-made product. Without the size issue, I would had given it 5 stars

I bought a pair of these to use at chili cook-offs. It's so much better than trying to heat chili in a traditional pot. You never have to worry about burning or scorching your chili. These are a great size for large events. Love this so much. Much better value than Restaurant Depot or any of the online restaurant supply houses.

So seeing the price creep up has made this harder to justify from a value perspective.I bought my first 20 quart set in July 21 for 80$ AUD - IMMENSE VALUEI bought my second 20 quart set in December 21 for 160$, and I feel here it’s on par with the expectations.The advertising is misleading at best on the volumes however.Have owned and used for over a year for melting paraffin wax. And the occasional batch cooking for freezer.I just measured with Pyrex, the top container holds 14 litres functionally (14 quarts), or 16 litres (17 quarts) absolutely to the topA side note. The larger vessel is a super high quality cooking pot. More then a cm thick base for spreading heat. I regularly use it for massive batches of freezer food. That holds 16 litres (17 quarts) functionally and 20 litres (21 quarts) to the top.It’s quite disingenuous to advertise as 20 quarts however I am extremely satisfied with the quality and value , based on the pricing I paid

Well, it’s not 20 Quarts, it’s barely 15. The bottom pot is where the water goes to heat the contents of the top pot, now that may be 20 Quarts, but the top pot that holds what you’re trying to heat carefully definitely isn’t 20 Quarts. It doesn’t match the claims made for it.On the positive side, it is beautifully made and excellent quality.

I use this as a wax melting pot for dipping cheeses for a wax coating. I needed a double boiler with enough capacity to hold several pounds of wax, not the rinky dink quart sized "large" double boilers that are commonly sold in home kitchen stores. Since this is a single purpose item I cant speak for other uses, the wax went in and that's where it will stay for the years ahead. Honestly its good and cheap, same quality I would see in most professional kitchens. In fact I have seen this very same one in quite a few kitchens. I would expect it to last about 10 years or more of hard pro kitchen abuse. In the home kitchen as long as you don't expose it to some heavy duty chemical or acid that messes up the aluminum I would think it would outlive you. I cant stress enough the importance of following the seasoning directions that come with it, proper seasoning will protect the aluminum and your food for many many years to come.

I have been looking for a large double boiler for some time. Normally the ones you find in the local stores or even online are too small for some needs. This was large and perfect for making the family tiramisu recipe!
