Had to buy a rimless baking sheet bc this was too long for my standard cookie sheets. Also, this material affects baking time- this material plus the cookie sheet it sits on requires a longer bake time or the macarons will stick. Still trying to work out if using a dusting of powdered sugar or something would help reduce sticking. If you know how to use one of these and adjust your recipes to it, I’m sure it would be fantastic to manage uniform sizes and shapes, but if you have no experience with a silicone baking mat, you may be in trouble.

Just dont buy it. I know people have had success with it but I bake a lot and doing macaroons by hand is much easier to get the correct size, taste, and texture and half a dozen batches with this mat and I couldnt get them correct. Biggest issue was the mat is actually a lot stickier than parchment paper even when I greased with different agents. Use parchment paper and make a template by hand if you can.

Love that this mat makes baking macarons so simple! I get perfectly shaped and sized macarons every time with this mat. Don't forget to let them cool properly before trying to remove them or you will end up ruining your macarons like I did! This is a great mat and I will be ordering another one soon.

Anything that makes macaron baking easier is five-stars in my book. Before I found this critter, I was painfully drawing circles on parchment paper (like a jerk, I know) so my macaron experiments would at least match in size. So I feel about half as stupid now. I can quickly pipe them out (although some may find the circumference a trifle small. They are a little larger than a quarter.) I like the size because I find the cookies pretty sweet. You also have to make very sure of your cooking time because the cookies will stick if not cooked enough. The entire process is exhausting to learn, but pretty impressive when you show up at book club with a batch.

My first time using the mat, the macarons were stuck on it. I didn't easily give up since it could be anything from under/over mixing the batter or it could be the length of cooking time. The second time was so much better. I added another minute and the shells came off easily.

I finally caved and bought one of these mats since I intended to bake macarons for my officemates for the holiday. Arrived in two days as Amazon prime promised, so that was great. Also bought cute boxes on Amazon for the gifting. (see pic)Used them for the first time last night and oh my god, these are the best looking macarons I have ever made. AMAZING. The one thing I will say is that will probably need to add a minute or so extra to your usual baking time. Since these are thicker than parchment paper and not sitting directly on the metal of the baking sheet, that extra minute is necessary for them to finish cooking if you don't want a sticky shell that wont peel off the mat. Trust me, I learned this the hard way with the second set batch that I baked. The first batch I baked for a full 20 minutes and they came out PERFECT. The second batch I did maybe 18:30 as I thought my oven was running hot and ooh, boy, did I live to regret it. I was only able to get the ones on the outermost edges to pop off clean. Leave them in! Lesson learned!Easy tip for peeling them off, I found, was to gently slide a finger under the mat once it had cooled as if you were going to press them out. If they've cooked long enough, they separate right away and clean up is a breeze. I'm buying two more mats right now, so I can make these cookies in large batches.

When I first saw this I though, "sweet! I suck at lining my macarons in a nice neat line, I should get this and i can get uniformed macarons." Boy was I wrong. First the wells are too shallow to prevent the batter from running into each other but a bit too deep to get nice "feet" because there is a small circular groove in each well. Also, I used my tried and true recipe and put one batch on parchment paper and the other on this. That way I would have a control for testing this out. You would think this was non-stick but I'm sure buttered Teflon could stick to this mat. I could not pry the macaron shells off without taking the mat outside and shaking it off. Yeah... bakers gonna bake, bake, bake and here I am literally trying to shake, shake, shake it off... this mat. Clean up was terrible. I soaked it in detergent and scrubbed and scrubbed and scrubbed to get the macaron residue off from inside each grooves. Why are there so many grooves? Was this meant to be ribbed for my pleasure? If so... nice try but no cigar... or cigarette.

I searched all over for macaron mats and found one at an online kitchen store for over $20 plus shipping. Finally found this one on Amazon. The delivery took a very long time, they did not send it for nearly a month after ordering. It came from China. I bought two mats, no discount on shipping. But I am very pleased with the product! The circles are the perfect size and easy to clean. The little ridge around each circle really help, rather than just having circles drawn on a mat. This is made of silicon, and is not a Silpat mat, but it worked fine. I did not have to double up my sheet pans as the mat protected the macaron bottoms. You may have to adjust your baking time a minute or two.I still need to improve how much I squeeze on each, but I do find these mats to be essential to my quest for making the perfect macaron.
