This is a non-stick pan large enough and with high enough sides to allow searing fish fillets or steaks without using its glass top. Very little splatter ends up on the stove and it does a prrtty good job with the sear. Maybe not quite as perfect as cast iron, but still very good.The pan conducts heat very well. I turn on high to start. Put in meat or fish and reduce to medium-high to sear first side. Turn down to medium and turn over food to sear second side. Turn down to medium-low or can put in oven to finish. Small well designed handles shed heat well and allow pan to fit in our oven. Note I usually rub the meat or fish with olive oil, not the pan.I can saute entire bag of mushrooms without crowding. Start with dry pan on high heat to drive out moisture, turning frequently. After a few minutes, you can add wine or garlic with oil and cook down. Perfect every time.This pan has their outstanding commercial finish inside. We have this same finish on 2 Scanpan fry pans for 8 months. Seems to hold up well so far. Just wash in soapy water and wipe dry with a paper towel while still just warm. Easy-peasy. I Would never put non-stick in dishwasher or use metal tools no matter what mfgr says.The top is tempered glass with 2 small vent holes. Works well.Pan is also good for pasta sauces. Unlike stainless steel and cast iron, and aluminum, the inside finish does not chemically react with tomato paste.I love this pan.

I've had this well over a year. Love it. Cooks great. Not too heavy. Durable. This stuff is premium stuff, and no sign of wear in the least. Stainless exterior polishes great. Never any resistance cleaning food off the inside. I think these Danish folks know what they're doing. Never-again DuPont, or whatever your sacrificial lamb company is called to pay for your cleanup.

Scanpan is top of the line for nonstick cookware. Highly polished stainless steel with a titanium textured nonstick nontoxic interior and recycled aluminum in-between. This pan is huge! It's just the right size for frying a zillion pieces of bacon at one time. I have other pieces of Scanpan cookware and prefer them to all the other nonstick brands out there. Quality is their motto. Instructions say to use medium heat and metal utensils are safe to use, however I prefer to use wooden utensils in order to preserve the integrity of the interior. This piece will become a workhorse in my kitchen.

These pots/pans are amazing! I have been a Scanpan user for many years, but these are the best yet. When I read that the nonstick on these was better than my previous set, I had a hard time believing that was possible. But.....I was wrong. The surface on these is incredibly easily to cook and clean. I purchased this new set because I switched from gas to induction for my range. Of course, this was a good excuse to buy all new cookware! I could not be happier with this purchase. Highly recommended.

It's my go-to pan for most stovetop cooking, and performs very well. I wasn't sure I would like the short handles, since it replaced a saute pan that had a long handle on one side, but I use it mostly on my induction cooktop so gripping the handle with a potholder while the burner is on is safe. The lid vent is perfect, and the overall look of the pan, as well as the construction, says "solid". I bought an entire set of this same line because I loved this so much!

Absolutely love this cookware. Totally non-stick and also nice to look at. The only thing you should be aware of is that the non-stick finish requires not using above med heat on the stove. I turn it on early and find that it’s hot enough for my needs.

The Haptiq STRATANIUM+ Nonstick 5.25 Quart Chef's Pan is great! The pan is large enough for any meal I cook (fried rice, sauteed vegetables, meats). It has a large surface area for browning or searing meats it is a heavy pan and does not slide around on my glass top range. It gets hot enough to sear meats well. I can use it withless than a tsp of oil to saute vegetable. Its suitable for browing thin strips of chicken for stir fry or fajitas and also for cooking up to 6 large breasts. So easy to clean: wipe out particles/grease with a paper towel and wipe with a soapy dishcloth. If you have hard water dry it to prevent spotting. If you have soft water can allow air dry. I can't say enough good thing about it. I love scanpan products and have a set of the classic.
