The jury is still out on this one. The handle was on backwards, and after turning the handle around to the correct direction, I saw that problem is a gap between the handle and the nut holding it on the spindle which would cause the device to not work properly. I read in a review from a similar model that I could purchase some 1/4 inch Tooth Locking Washers to put between the handle and the nut to secure it. I have ordered the locking washers from Home Depot as they have free shipping (yes even on an $1.50 item!) so as soon as I get them, I will let you know if this works or not. I know that there can be problems with things so I'm not upset, it's just a delay.P.S. This did secure onto my kitchen counter no problem! I saw from reviews of similar products that this can be an issue. The counter is approx 1.25 inches thick btw.P.P.S. I received this product as part of the Amazon Vine program, but this does not affect my review. We were required to leave accurate, honest reviews for the products we receive in order to participate in Vine. If, in the future, I feel there is something you should be aware of, I will update my review.

The O’Creme Cavatelli maker is pretty lightweight — not steel, perhaps aluminum? — but does the job. Mine arrived with the handle installed upside-down, so I had to flip it to the proper orientation in order to use it. The blade cuts smoothly and evenly, too.It’s compact enough to store in a drawer, but I popped mine in the cupboard with my other pasta making tools because I like keeping them together.As with any new appliance or tool, I gave it a good wash after thoroughly inspecting the cavatelli maker. The wooden rollers are coated, I used a soft brush to remove any splintered wood, and then I was good to go. Clamp it down on your table or counter, and you’re all set.In terms of usage, I think it’s important to note that you need to use the right dough consistency. If your dough is too wet, it won’t work properly. That’s not the fault of the machine, but I’m just pointing it out just in case this is anyone’s first time making homemade pasta. If this is your first time making pasta and/or using an cavatelli maker, I recommend searching for videos online. The O’Creme maker does come with a brief guide and tips, but you may want to see the process in action. I have no comment on the included recipes because I did not try them since I have my own. Overall, it works well.

Working at an Italian restaurant that makes all their pasta by hand, I was turned onto making cavatelli from scratch. I had a little bit of a heads up with the recipe and proper hydration, but the very first batch turned out beautiful and delicious. Who knew this could be so quick and easy?
