Upgraded from a 6 quart to this beast. Smells great when cooking, easy to clean, and cooks very fast. The food prepared in the pot tastes phenomenal. Built well and the value for the money makes it a steal for amount I use it. Quiet when releasing and very efficient.

It now operates with the calm efficiency of a Zen master—no more sudden hisses, no more kitchen eruptions. It cooks, it steams, it pressure-cooks, all while being so polite you could hold a conversation right next to it without shouting over the chaos.The 8-quart capacity makes it perfect for tackling big meals or cooking enough soup to feed a medieval feast, and it handles every function—from slow cooking to rice steaming—with ease and dignity. But if you're used to the older black Instant Pot, you might notice something different: this new gray model takes longer to cook some things, especially dry beans. We use it once a week and it's great for bulk things like chicken broth, and quick meals but it's not quite as quick as hoped (take 25 min to come up to pressure before it starts cooking) so we often default to our air fryer for quick meals. Also we do cook bean meals for a cheep complete protein source, but we have noticed that we can't get them right in the Instant Pot when compared to cooking them in crock pot all day. This model is large and takes up significant counter space. Still works great for most things when we plan well enough.

I had my 6 quart Instant Pot for the past 15 years, but it had no Sous Vide function, so decided to upgrade to the new one. The first time I used it, I did not remove paper seal from one of the parts inside the top, and it created a giant mess. Then I thought it takes forever to warm up before cooking compared to my old Instant Pot. I put it on 'Saute' function first, and it seemed to do the trick for the first few weeks. Now I don't notice it being slow heating up, maybe it needed some time to get used to.I have cooked beans, rice, dumplings, used Sous Vide funciton, and have made yogurt in this device.Yogurt and Sous Vide are amazing and easy to cook, I especially love Sous Vide funciton, and appreciate that I can set the temperature. The meat turns out absolutely delicious, and I don't even need to buy special sous vide bags, I just use Ziploc brand, which is sous vide certified, and it's very cost effective.When I cook beans, this instant pot seems to cook them not as well as my 15 year old one, so I make sure I soak the beans first, and I set some extra time to cook them. Otherwise, this is an exceptional device, and I can't say enough how much time it saves me in cooking! After getting used to and workout out some issues, this is my new favorite device!

If you’re looking for a reliable, multi-purpose kitchen tool, I can’t recommend this Instant Pot enough. Worth every penny!
