If you are going to the expense to serve caviar, then you need to serve it properly or not at all. You need an iced vessel with a glass insert to hold and serve the actual fish eggs (they are so delicate that many materials will leave an off... even bad taste). O.K., I know you are saying, so I have the serving vessel now I am ready to go, but the utensil that you actually serve, spoon or spread those eggs with is also crucially important!!! The best material for that job is fashioned from animal bone (or shells). This is my favorite and it is from the Ankole cow horn... It is dense, impervious to distracting tastes and beautiful!

Our New Years tradition has always been champagne and caviar. This year we needed new spoons as the mother of pearl spoons we had been using were chipped. Of course the first place to look is on Amazon. Since it is already an expensive tradition we decided to splurge and ordered the more expensive Ankole Cow Spoon. We are very pleased with this spoon. It is the perfect size and weight and adds just the right amount of dollop to the cracker. A nice little addition to our New Years tradition!
