This is a large pan! I wanted one with extra capacity for certain dishes that would need the space, like something with a lot of vegetables, for example. Well, I got a big pan, for sure. I wish that it was a little deeper, as it will take some finesse to keep the ingredients being cooked inside the pan. The reason I say that is that the GreenPan nonstick is fantastic and food can glide around easily. I'm still getting used to how good the nonstick capabilities are for these pans.It's a good thing to be challenged to revisit / relearn some skills, including cooking techniques. I'm enjoying cooking more lately since I invested in GreenPan cookware. So far, they're easy to clean. Although they technically can go in the dishwasher, they've been quick and easy to hand wash. They're substantial enough to get the searing / sautéing / grilling done, but lightweight enough that I can double stack a few of them on the hanging hooks around our vent hood. I'm kind of obsessed with these pans, actually. Happy to have this Big Daddy version to round out the other pieces we have in our kitchen.

The non-stick material is great. Omelets and pancakes just slide right out of the pan. This makes for quick and easy cleanup.

Great pan and will last IF: you always cook LOW heat, clean immediately and protect if stacking.

Indulge me in my love affair with this pan! ( I rarely write reviews.) I found this pan when looking for a cleaner, healthier, toxin free cooking pan. Boy am I glad I tried this! I’ve since purchased a smaller size and am having the same response. This pan heats quickly and evenly. This pan does not require all of the oils to cook that others do. It’s truly non stick and cooks everything to perfection. The clean up is brilliant. After letting the pan cool, simply wash by hand with ease. It cleans like a dream. I’m telling you, you must purchase this pan if you are looking. Seriously, stop reading reviews and buy this pan! You will never regret it.

It came in a box that was all broken and it was scratched on the bottom of the pan. Also, it is advertised as 10 inches, which my stock pan top and other pan top will fit. Well, it is actually 10 1/2 inches, so now I have to buy a 10 1/2 inch top. I see one online, but it is pricy, so I am waiting to see if the thrift store has one first.Otherwise, the inside of the pan was not scratched, but the bottom sure was scratched. UPS must be throwing things into the truck, or the stuff fell over in the truck and broke open the boxes? The delivery driver was very nice.There was a sale, and I cooked a ribeye using my spatter screen that fits it, thank goodness. Using a tiny bit of avocado oil, and cooking a little over medium 3 minutes on one side, use prongs to get the sides, and a couple minutes on side to for my $10 not huge. It turned out perfectly. You don't need super high heat ever. Let the pan cool after. Take some paper towel and wipe out any oil or butter used and toss it. Wala; it is practically clean. Once cooled off, I gently wash the pan by hand in hot or warm soapy water, rinse, and wipe dry with a soft cloth or air dry in the dish drainer. Cleaning is a breeze.

I've had this pan for over a year and use it regularly. For those who say it looses it non-stick, mine still works great, I follow some key points from the instructions:1. Never turn your burner past 50% (medium) heat. You won't need it higher, I've seared steaks perfectly at medium heat... this thing gets hot. Any hotter and I suspect that's why some people lose the non-stickiness.2. Always put some oil/butter in the pan to start, no-matter what you are cooking. Even a tiny bit is all you need, just enough to coat the fine pores of the surface.3. Use a soft sponge to wash. Because it's non-stick you never need to scrub the pan.I also use a felt pan protector when storing it so it doesn't get scratched.

I have a few of these original Greenpans. They are a bit expensive especially for the small ones.

Update: 11/20/24. I purchased one five years ago and still use it. There are a couple of nicks in the ceramic coating. My fault! I bought another almost three years ago so I could take the “old” one to my vacation home. I treat the “new” pan more carefully. It is completely flawless and slippery. Still works as well as it did 3 years ago.2019 review: This little pan is great. I’ve owned it for a year and a half. I have have NOT cared for it properly. I used cooking spray, washed it with a scrubee and washed it while it was still hot. It still works fairly well! Melted cheese gets stuck sometimes. I just ordered another one, which I will take good care of! Is perfect for flipping eggs with no spatula. I love it!

I bought a premium pan a few summers ago at Toronto's CNE. It was actually quite good for $30. Only it began to become stained and scratched quite easily and looked much older than it was.I took a chance on this one and am very pleased. After six months of continuous use (my daughter and bf have moved in) it stills looks brand new.It cleans so easily. Heat distribution is great, often cooking bacon and eggs next to each other. It's plenty big for that. Nothing sticks to this and the weight is well balanced, not too light or heavy.Get it, you won't regret it.

UPDATE JUNE 15 2023 Have used the 10-inch pan for 2 years now, and food is now sticking, especially when I cook eggs. It is the one I use most. Always add oil, never put eggs or anything else I am cooking, without adding it. Never use high heat, never use metal utensils, never put in dishwasher. It is not as non-stick as it used to be. Egg residue accumulates and must be soaked to remove it with a plastic scrubber. Have not changed my rating yet because I like the healthier ceramic coating. I hoped it would last longer. My old non-stick pans with the PTFE and PFOA stayed non-stick for years, even when put in the dishwasher, but I am not going back to the old non-stick due to the toxicity. Maybe standard procedure for ceramic non-stick is to replace them every two years, like it not. The durability is not there yet.UPDATE MAY 21 2022 Still using the 8 and 10 inch pans. No problems with losing non-stick surface or food sticking. Still using olive oil, grapeseed oil, and ghee. Tried high-temp avocado oil as well. I still start with a cold pan and gradually increase the heat. I use medium heat, no higher. I get a good sear on steaks and salmon at medium heat. I let the pan cool down completely before I wipe it out or hand wash it. I also steam asparagus and green beans using a universal glass top. Getting ready to order the 11 inch pan today while it has a coupon. Hoping it will perform just as well as the 8 and 10 inch versions. Will be getting rid of my last non-ceramic Teflon coated pan.Update July 15 2021. Have been using the 8 inch and 10 inch pans for over a year now. They still cook beautifully, non stick, no problems. I do not put them in a dishwasher but rinse and wipe out. Cooked a tomato and cream cheese omelet this morning. Used a teaspoon of olive oil. No sticking. Have seared salmon many times with no problems. I start with a cold pan on low and gradually increase heat. Will be purchasing the 12 inch pan in the near future.ORIGINAL REVIEW: I love this pan. Easy to clean, cooks evenly, definitely non stick. I have cooked eggs, beef, chicken, apples, and grilled cheese sandwiches. I use olive oil, grapeseed oil, and ghee. Some reviews state the non-stick quits working or comes off. No problem with that so far. I replaced an older pan that was not ceramic. and had the old-style non-stick surface. It was a good pan but I wanted a healthier alternative. This cost of this pan is economical and it works. If I have any problems, I will update.
