I'm very happy with this banneton.It's next-level sturdy compared to other wood-pulp banettons I have used, with walls at least twice as thick, and is correspondingly more durable. Still, it's very lightweight and easy to handle.The top edges are well shaped allow a full dough rise without overflow.The size is large enough to make as big a loaf as I can fit into my largest dutch oven.A light dusting of flour easily prevents sticking. I have had no problems with dough release, just a simple flip does the trick.It cleans up easily with a little brushing.This is bakeware to use for years.

Like others here, I was intrigued by this banneton and really like the idea of using wood pulp vs. the usual junky bamboo or whatever it is. So far, this has been strong and the one I received was perfect for shape, thickness, etc. My biggest issue with this, however, is the size as I find it is too small for my go to recipes - it probably actually would be better if these was sold as a pair although that might be prohibitively expensive. I'm also on the fence about not washing it although I understand why and do think you can basically just brush everything out, it's just different, especially when you know the dough moisture is being absorbed. This may be coming off as more negative than intended, it is a super sturdy product that does as described, I just wish it were a little bigger to be more practical.

Got one for Christmas and used it to bake a ciabatta recipe that made two loaves. The loaf I proofed and formed in the Banneton basket was such a better loaf, I bought a second one. Company is great, order came quickly and price is reasonable. If you bake bread, you should add this to your tool chest.

The ad says 11 inches. My ruler says 10.25 inches. At 3 inches high it will not hold a decent size loaf as in 500g or so as with 70% hydration you are looking at 850g's. 1.1lb 's as advertized is 498grams. With flour and water. You can divide that up anyway you want but you have a very small loaf. If you put a bigger loaf in it, it is going to stick way higher and that gets tricky when you go to take it out and put it in your DO. I already floured it so will keep it for a 350g small loaf but I ordered another brand for a bigger loaf. This time I will try it with the dough in a plastic bag and see how it fits and if I don't like it I can send it back. Having said that, this does seem to be of good quality. I have several bannetons of the round wood type that I have great luck with by just putting flour in them but wanted to try this variety as several have said they are wonderful. But we will see. After baking a small loaf I may come back and add to this if need be. Just be aware that for a medium or larger loaf this will not be wonderful.
