Instead of dealing with drywall around my self-installed tub, I decided to use trim. After I was about done, I realize why people use drywall. I doubled down and got these little caps to hide the screws I used to secure the trim. It may not be perfect, but these make it look a whole lot better! And if I ever need to replace a shower panel or the whole thing, it will be a lot less messier! Someday in the future, I may countersink some screws and do it properly, but these are a great fix till that day comes!
